Old vines, 70% Grenache - 30% Syrah
WINEMAKING
Night harvest (fresh must at 10°C).
Destemming and crushing of the berries and cold maceration.
Alcoholic fermentation under controlled temperature (18°C) using selected indigenous yeasts
Fermentation in stoneware eggs, barrels and demi-muids of oak mostly aged 1 to 10 years.
Aged for 8 months with stirring of the lees.
Blending of grape varieties.
TASTING
This crisp rosé offers an intense and complex aroma where citrus, quince, and nutmeg intertwine. The palate is powerful, rich in aromas, and smooth in flavor, with an exceptionally long and flavorful finish. This rosé is a fine dining wine with an aging potential of 5 to 20 years.
Best enjoyed at 13°C.
FOOD AND WINE PAIRINGS
This great gastronomic rosé is not intended for aperitifs.
It pairs naturally with many dishes made with tomato sauce. It also works well in classic dishes like bouillabaisse or even with spicier international cuisines.
